File gumbo
Native to North America, filé powder, also called gumbo filé, is a spicy herb made from the dried and ground leaves of the sassafras tree.
This greenish-gray powder is part of a truly N'awlins style roux if you are making gumbo...it will thicken just about anything and lend a fantastic, earthy flavor as well.
