chestnut trees in the lower mountains of Corsica. This honey is
collected in the month of July and has a deep amber color and a
crystallized texture. The flavor is classically chestnut with a full
bitterness, a deep, earthy sweetness and a mild salinity on the finish
which makes it an intriguing honey to pair with cheese.
