Steen's syrup has been made for over 85 years in the sugar cane fields of south Louisiana. The ripened sugar cane is harvested at its sweetest and is then ground and the juice is extracted. The sweet juice is cooked in open kettles at a higher temperature and a longer period of time to obtain the darkly caramelized color and flavor of the molasses.
