From Beira Baixa, south of Serra da Estrela and not far from the Extremadura region of Spain, this raw sheep's milk cheese is also made using thistle rennet. The curd is pressed, giving a denser texture with a creaminess that expands as the cheese dissolves. Mild and nutty, its rind is edible and contributes to the overall flavor nicely.
