This vincotto is a product of the Calogiuri family based in the Puglian city of Lizzanello (the very heel of the boot). Negroamaro and Malvasia Nera grape varieties are pressed to obtain the must. The must is then filtered and cooked in an open vessel for 24 hours until it is reduced to one fifth of the initial volume. The resulting product, which is already quite thick, is poured into small oak barrels and aged for more than four years with the final six months of aging combined with fresh figs. 

The flavors of grapes, plums are blended perfectly with the syrupy fig flavors. Its silky viscosity and deep sweetness make this condiment perfect for roast meats, vegetables and desserts. One of the easiest ways to introduce yourself to the wonders of vincotto is to drizzle a bit in a cup of yogurt or over a scoop of ice cream.
