This unique vinegar is born of Philippe Gonet's passion for the traditional wines of the Jura region of France. The Chardonnay grape is the most planted variety in the Jura. The younger grapes are harvested for sparkling wines while the riper fruit is reserved for the still white wines.
This vinegar is produced using traditional methods where the chardonnay wine is allowed to acetify over the course of three to four months. The vinegar is then aged in 228-litre oak casks for 4 years. Gonet's Chardonnay vinegar has a clean, crips acidity that works beautifully with all manner of vegetables (especially grilled!) and fish.
