This honey is produced in eastern Sicily, near Syracuse, where more than six hundred hives spend the winter. In April, the bees begin their work, gathering nectar from the prolific orange and lemon blossoms planted in organic groves.
Citrus honey crystallizes quickly - usually in about three months. It has a clear, almost white color with a few streaks throughout. It is sweet and aromatic, with hints of citrus blossoms.
This mild honey is perfect as a sweetener in tea. In the kitchen it works well paired with almonds for cakes and cookies. For cheese, pair this honey with a spicy Gorgonzola piccante.
