Manigodine is a farmhouse cheese made in the style of the famed Reblochon, but in a larger format that allows it to age longer so that it is suitable for the US market (Reblochon is not allowed into the US). Guillaume and Murielle Burgat work together to make this milky, rich and nutty washed-rind cheese. While not a perfect replacement for Reblochon, it has similar characteristics that make a perfect basis for Tartiflette.
