This raw cow's milk cheese is made by the family owned and operated Uplands Cheese Company in Dodgeville, WI. The cheese is wrapped in a thin band of spruce bark as it ages in the style of the famed Vacherin Mont d'Or.
Each wheel weighs about 1 lb and has a lightly peachy colored rind with a pudgy interior that is like thick pudding when fully ripe and served at room temperature. The cheese has a funky aroma and a woodsy and milky flavor that has hints of onions and nuts.
