The farm "Bittern" is at the heart of the Colfiorito Plateau, Oasi Naturale and Parco Regionale dell’ Umbria. The area consists of seven-tectonic-karst basins, which form the bottom of ancient lakes, dried up both naturally and by man. The plateau, which covers an area of 338 hectares across Umbria-Marche Apennines and across the Colfiorito Marsh preserves is a natural laboratory of biodiversity, evidenced by the rich flora and fauna. The great marsh ecosystem is the ideal habitat for many species of rare water birds including the protected Bittern (Il Tarabuso), which has a higher population density in the Oasi Naturale Natural Oasis than anywhere else in Europe.
The Colfiorito Marsh since 1976 has been recognized as a wetland of international concern under the Ramsar Convention, for the presence of a peat bog, the richness of plant and birdlife. The landscape of hills and karst plains is a symbol of the unchanged history and pastoral agriculture of the Apennines. This area was the home of the ancient city of Plestia, where numerous archaeological finds and "castles" are preserved.
The composition of the soils in Colfiorito, their fertility and the altitude in which they are created produce the ideal conditions for organic cultivation of a variety of grains and legumes, including these chickpeas.
Small chickpeas from this region are prized for their rich flavor and quick cooking properties.
