Discovered on a trip through the Pyrenees, this Basque jam is the product of two brothers who run a restaurant and hotel in the town of Sare. Once we opened the first jar, we knew these jams were different - each jar has a thin layer of wax between the lid and the jam - reminiscent of old school preserving. The technique is also very practical - as you use the jam and the level gets lower and lower, just keep the wax on top of the jam to help keep it fresh.
This jam has a smooth texture and a classically deep cassis flavor that we love paired with flavorful aged cheeses such as Parmigiano-Reggiano or Monte Veronese Malga or with milder creamy cheeses such as Brillat Savarin or Chaource.
