Discovered on a trip through the Pyrenees, this Basque jam is the product of two brothers who run a restaurant and hotel in the town of Sare. Once we opened the first jar, we knew these jams were different - each jar has a thin layer of wax between the lid and the jam - reminiscent of old school preserving. The technique is also very practical - as you use the jam and the level gets lower and lower, just keep the wax on top of the jam to help keep it fresh.
This lemon jam has bits of thinly sliced lemon rind, has a beautiful aroma and a full, bright flavor of lemons and sugar.
