Wheelock Mountain Farm is in Greensboro Bend Vermont amidst rolling green hills filled with broad-leafed Sugar Maple trees. This is small-batch maple syrup for sure. Many larger producers use a vacuum sap collector that pulls from a network of plastic tubing plugged into tree after tree. As a non-profit educational organization, Wheelock Mountain Farm depends on a dedicated farm team and a host of volunteers to produce their high quality, decidedly low-tech syrup.
They hand tap the trees, collect the sap in buckets, haul the sap by hand to their sugar house where the sap is boiled on a wood-fired evaporator.
