Using the French Orleans process and traditional barrel aging, Katz & Co. transforms organically grown north coast California late harvest (30 brix) Zinfandel into a garnet colored vinegar with a lower acidity and a balancing residual sugar.
This vinegar offers a bit more texture than most red wine vinegars and we love it when we're in the mood for something a bit brighter than a balsamic but still with a touch of sweetness. Try using this in your next pan reduction and you'll love the results.
