On a recent tour of Italy, we met up with the Bianco family in the town of Santo Stefano Belbo just south of Asti in the Piedmont region of northern Italy.  Marco, Eliana and their son Riccardo primarily produce traditional wines of the region such as Moscato d'Asti, Dolcetto d'Alba and Barbera.

On our visit, we discovered their small production of artigianale vinegars made from high quality Moscato and Dolcetto grapes.  They produce two levels of quality: L'Aspretto, made using lower quality grapes and the Brusc which is made using higher quality grapes and is aged for 3-4 years in old oak barrels open to the air.

These vinegars are bright and intense with beautiful aromas, lingering flavors and no harshness.  The dolcetto vinegar has a pale reddish color and notes of caramel and orange peel.  We love to sautee up a bunch of fresh greens with some garlic and right as it is finishing, dash a bit of this vinegar in.
