Limburger was originally manufactured in the monasteries of the dukedom Limburg in Belgium. In the Allgäu region of Germany, this cheese has been produced since 1830 when agricultural reformer Carl Hirnbein began to produce soft cheeses in the Allgäu Region.

This organic Limburger from the Zurwies / Allgäu Coop is made by Anton Holzinger who uses fresh, silo free cows milk from local farms. It is ripened for 3 – 4 weeks during which time it is smeared daily with a b. linens mixture.  This treatment gives the cheese its characteristic peach coloring and full aroma. Despite being washed as it ages, this Limburger often develops a thin bloomy crust which gives it a mellow flavor and a beautifully creamy texture with flavors of hay and mushrooms.

In the Allgäu region the Limburger is traditionally paired with young spring potatoes and fresh butter and cool raw milk or in vinaigrette of vinegar and oil and sliced raw onions ("Saurer Käs").
