Made by Peter and Bert Boonen using pure sheep's milk from their dairy located in Hamont-Achel, in the Flanders region of Northern Belgium. This is a rare, sheep's milk gouda made in extremely small quantities (2 wheels a week). Whenever Peter and Bert can send some, we take it!
It has a beautiful white interior, with a supple yet firm texture, and a smattering of small holes throughout the paste. The flavor is immediately creamy, nutty and sweet with notes of fruit and nuts and a light sharp finish.
