Dario Pozzolo has become a leader in the world community of honey producers by working with Slow Food to encourage artisan apiarists to follow sustainable agricultural practices. Dario is based in the town of Bra, Italy, and transports his hives all over the surrounding territory of the Roero following the blooms that he wants for his varietal honeys.
This thyme honey is collected from the craggy outcrops of the Italian Alps where wild thyme flourishes. The honey has a beautifully full aroma that is both floral and farmy with a flavor that has a rich herbal sweetness. Spread a little on a crusty baguette with a piece of Calcagno or Bra Duro.
