Dario is based in Bra and transports his hives all over the surrounding territory of the Roero following the blooms that he wants for his varietal honeys.
The Tarassaco honey is made from the pollen of the wild alpine dandelion which covers the hillsides of Piedmont throughout the spring. This honey is typically produced only in northern Italy and in most cases, it is blended into a millefiori honey. The first thing that struck us about this honey was the deep golden color of the creamed honey. Tarassaco honey is known for its intense aroma that is reminiscent of the farm and of potent cammomile flowers. The flavors tend toward the milder side with a rich sweetness, notes of cammomile and a slightly bitter finish.
