François Pralus (pronounced Prah-LOO) is one of the committed, artisan chocolatiers who produce their chocolate from bean to bar. He buys the finest beans he can in each variety - Forastero, Trinitario and Criollo from around the world and he prepares each in a way that he feels allows it to express its true terroir without compromise.
A single origin bar with 80% cacao (trinitario and criollo varieties) from Ecuador. For an 80% bar, the Fortissima offers a mellow intensity that starts with a firm acidity and builds into leathery and slightly woodsy notes without knocking you over with bitterness.
