Made by Stephen Fletcher and Linda Dutch at Ram Hall, near Berkswell, England. This flying saucer shaped cheese is made using raw sheep's milk and vegetable rennet.
It has a hard, sometimes granular, texture with flavors of roasted nuts and caramalized onions. While a nice addition on any cheese plate, we especially enjoy grating it over soups and stews.
