Charolais is named after the Charolais region of Burgundy where goats roam across the granite plains and eat the prolific grasses and wildflowers. The cheese is formed into a small barrel shape with slightly curved sides. Traditionally the cheese is made using milk that is available whether it be goat, cow or a mix of the two.  We import only those cheeses that are made with 100% goat milk.

The cheese can be found fresh, lightly aged or drier and more aged.  As it ages, it develops light grey and blue molds on the rind and the flavors transform from the brighter lemony to nuttier and earthier notes.  Ours is typically on the fresher side, giving a light richness on the palate and a balance of bright, almost lemony flavors and a hint of hazelnuts.
