Produced in tiny batches by Quinta do Côro using a recipe from the Odivelas Monastery, ripe quince fruit with just the right acidity and sugar is slowly cooked with sugar until it reaches the desired texture and sweetness. 

When we first saw this quince paste, we immediately knew it would be different because it was a deep peach color rather than the dark purple color we've come to expect with membrillo. This light color is a sign of very fresh product, made using perfectly ripe fruit, careful cooking, judicious sweetening and no preservatives.
