François Pralus (pronounced Prah-LOO) is one of the committed, artisan chocolatiers who produce their chocolate from bean to bar. He buys the finest beans he can in each variety - Forastero, Trinitario and Criollo from around the world and he prepares each in a way that he feels allows it to express its true terroir without compromise.
A single origin bar with 75% Trinitario cocoa sourced exclusively from cacao plantations in Colombia. This bar has a powerful aroma leading to flavors of coffee, buttermilk and caramel with a slight astringency on the finish.
