Posole (or Pozole) is dried corn that's been slaked, giving it a nutritional boost and making the ancient grain more digestible. Also known as hominy, Posole works in stews, as a side dish, in classic Mexican and southwestern dishes or even ground in a food processor to make grits.

Soak the hominy overnight, then simmer with a chopped onion for about three hours or until the kernels are tender but not mushy (think al dente). If you've used canned hominy before, the flavor and texture of these kernels will be a revelation!
