One night after a tasting of balsamic vinegars with Andrea Bezzecchi of Acetaia San Giacomo, Andrea showed us seven slender bottles with hand-written labels with words such as "birra", "mela cotogna", "Lambrusco" and "Ginepro" on each.
That night we learned about his bold new project to create a line of unique, slow-process (aka Orleans) vinegars, using ingredients from local farms (organic whenever possible).
This vinegar is uses a blend of red wines from local and organic Lambrusco grapes. The vinegar is made using the traditional and time-consuming Orleans process which preserves aromas and flavors and gives the undiluted vinegar a full acidity. The vinegar is aged in barrels made of juniper wood which adds a woodsy depth to both the aroma and flavor. This vinegar is perfect for grilled meats and mild greens.
