Black, white and green peppercorns all come from the same Piper nigrum plant, a vine that grows primarily in hot, humid, tropical environments such as India, Indonesia, and Brazil. Fresh, green peppercorns undergo immersion the in boiling water for about 20 minutes. This kills the enzyme in the berry's skin which normally would turn black when dried.

These dried green peppercorns retain their strong, aromatic quality and beautiful green color, but they are less intense than either white or black pepper.  Use in delicately flavored dishes when you want a pepper flavor with less pungency.
