Sweet, rich and porky, we think our house-made pancetta rivals the best of the boot. 1/2 lb package, sliced medium-thick. 

We use naturally raised pork bellies from a local farm  and dry cure them flat for one week with a mixture of salt, sugar, thyme,  garlic, juniper and chili flake. 

After the cure, the bellies are rinsed and spread with  black pepper and nutmeg then rolled up and tied.  The pancetta hangs for about a month until it is ready for your favorite recipe.
