Finally! After such a long wait and with the tease of a few other Iberico products arriving in 2006, we finally have the true Jamón Ibérico made from the meat of the famed Ibérico pig in the small village of La Alberca in the region of Castille y Leon in Spain.

The primary pork product of infatuation in Spain is Jamón Ibérico. While there are other amazing products produced using the meat of the Ibérico pigs (see above), it is only the hind leg that produces the Jamón. Jamón Ibérico constitutes only about 5% of the total Jamón production in Spain.

The extensive marbling gives an incredibly silky texture to the meat and the flavor is meaty but with a sweet and faintly fruity finish. From our point of view this Jamón has been well worth the wait!
