This is the traditional North-African grain made of durum wheat flour. This is the quick-cook variety that makes your meal preparation very easy. Pour 1 part salted boiling water into a bowl with an equal part couscous. Cover the bowl and let it sit for 5 minutes. Once the water is absorbed, mix in some butter or olive oil.
This is a perfect basis for one of our favorite summer dishes: Taboule. Recipes vary, but we like to make ours by mixing the cooked couscous with diced onion, cucumber, tomato and parsley. Let it sit after mixing so that the flavors can become integrated.
