The farm Il Tarabuso "Bittern" is at the heart of the Colfiorito Plateau, Oasi Naturale and Parco Regionale dell’ Umbria. The area consists of seven-tectonic-karst basins, which form the bottom of ancient lakes, dried up both naturally and by man. The plateau, which covers an area of 338 hectares across the Umbria-Marche Apennines and across the Colfiorito Marsh preserves is a natural laboratory of biodiversity with rich flora and fauna. The great marsh ecosystem is the ideal habitat for many species of rare water birds including the protected Bittern (Il Tarabuso), which has a higher population density in the Oasi Naturale Natural Oasis than anywhere else in Europe.
The composition of the soils in Colfiorito, offer ideal conditions for organic cultivation of lentils and other seeds and grains. These lentils are small, flattish and khaki to brown color. They have a thin skin and have a nutty flavor and a meaty texture when cooked.
