We paired this olive oil and vinegar together because we feel they are representative of the wonderful qualities that can be found in each product. Both are exceptionally well balanced, making them very versatile in the kitchen. And, most importantly, they taste delicious.
L’Olio delle Caselle Extra Virgin Olive Oil is produced exclusively by the Cimicchi family in the hills of Orvieto, in Umbria. Comprised of a mixture of carefully selected cultivars of Orvieto: Moraiolo, Leccino, Frantoio and Rajo (a variety particular to Umbria), it is one of our most balanced oils – it doesn't knock you over the head with tons of grassy aroma or an intense peppery kick, but it offers glimpses of greatness in all of its sensory attributes. Harvest method is by hand from October through early December.
Located in Modena, Italy, La Vecchia Dispensa has been producing and aging world class balsamics for over four generations. This vinegar is made using cooked and acetified musts from exclusively organic grapes. It is a rounded and dense vinegar with a decidedly sweet flavor. Ideal for cheeses, grilled vegetables and drizzling over fresh ricotta or vanilla ice-cream. The beautiful bottle comes with a cork dropper to make sure every drop is appreciated.
