This vincotto is a product of the Calogiuri family based in the Puglian city of Lizzanello (the very heel of the boot). Negroamaro and Malvasia Nera grape varieties are withered on the vine then further dried on wooden trusses before being pressed to produce sweet wine. The grape skins, seeds and whatever juice is left over is called the must. The must is then boiled gently for 24 hours until it is reduced to one fifth of the initial volume. The resulting product, which is already quite thick, is poured into small oak barrels and aged for more than four years.

The flavors of grapes, plums and spices, along with its silky viscosity and deep sweetness make this condiment perfect for roast meats, vegetables and desserts. One of the easiest ways to introduce yourself to the wonders of vincotto is to drizzle a bit in a cup of yogurt or over a scoop of ice cream.
