This unique vinegar is born of Philippe Gonet's passion for the traditional wines of the Jura region of France. The Savagnin grape is found in the classic Jura wine called Vin Jaune (yellow wine). This type of wine is bottled after six years of aging in large wooden casks
during which time it develops a thin layer of yeasts (called the veil)
on its surface. This is a bright, oxidized wine that has a beautiful nuttiness in both aroma and flavor that is reminiscent of a delicate dry sherry.
Gonet's vinegar is aged an additional two years before it is slowly transformed into vinegar. The wine's nuttiness is the foundation of this bright vinegar. The acidity is strong and up front, but after you taste it, you are left with a delicious lingering toasted nut flavor. Try this vinegar anywhere you want to highlight these flavors such as with grilled fish or in a mignonette for oysters - or paired with a dash of olive oil over a spinach and toasted walnut salad.
