The olive oils from Oleum Flumen are the result of two families working together with the olives they grown on 180 hectares of olive groves with seven different varietals of olives.
This "Finca" oil is a farm blend of Arbequina and Gorbal olives harvested in late October and early November. The olives are pressed within four hours of harvest to maintain as much of the fresh flavors and antioxidant properties as possible.
The oil has a beautiful deep green color and offers a wonderful balance of flavors. It is a bit milder than the Premium oil from Oleum Flumen, but it also has a bit more depth of flavor.
