Lavande Fine is a wild lavender found only at high elevations and
flowers late in the summer. Each year we wait to hear if the conditions
were good enough to allow the Bresc's to collect this honey. In 2005
and 2006 we didn't see any. In 2007, depsite the small quantity, we
were allowed to bring in several cases. The honey is a lighter in
color than the regular lavender honey and crystallizes to a
smooth buttery texture. It has a beautifully subtle flavor with a
balanced sweetness.
