The 2007 harvest of the Montagne honey is made from the nectar of
wildflowers blooming in high mountain pasture during the summer. This
batch is composed mainly of oak, wild thyme, Savory and wild lavender
nectar. This year's harvest is much darker than last year's thanks to
the dominant color provided by the oak. The texture is spreadable and
the flavor is deeply woodsy with hints of the thyme.
