This heather honey is made from the nectar of the white heather
"bruyere blanche" found in the mountains surrounding the town of Viens.
It is typically found in its naturally crystallized form which gives it
a buttery texture at room temperature. It has a deep caramel color that
suggests the aromas flavors you will find in the jar. This honey has
such beautiful balance: a rich floral nose with hints of sun-burnt
grasses, a deep flavor of caramel and wildflowers with a touch of
bitterness.
