Dario Pozzolo has become a leader in the world community of honey producers by working with Slow Food to encourage artisan apiarists to follow sustainable agricultural practices.
Dario is based in the town of Bra, Italy, and transports his hives all over the surrounding territory of the Roero following the blooms that he wants for his varietal honeys.
Castagno honey is made from the pollen of the chestnut tree flower and is known for its beautifully deep color and strong, earthy flavors. We love this honey as a pairing with some of our funkier cheeses such as a ripe Robiola or a chunk of Bra Duro.
