Consider Bardwell Farm is located in West Pawlet Vermont. Cheesemaker Chris Gray uses milk from the  nearby Jersey Girl Farm to make this and all of their cow milk cheeses. Pawlet is made using raw Jersey cow milk and is aged between four to six months. It has a creamy texture with a fruity flavor with a bit of sharpness. It is a perfect melting cheese or fits well on any cheese plate.
