Michael Lee has a herd of 30 lovely milking goats on his modest farm in  Cornwall, VT, and he makes some of our favorite goat's milk cheeses anywhere - and not just in the United States. After working at Formaggio Kitchen South End for several years, Michael and his wife Emily found the right land in Vermont to take their passion for selling cheese and translate it into cheese making.  

Twig Farm's Fuzzy Wheel is a testament to the cooperative nature of cheesemaking in the region. For this cheese, Michael blends his end-of-season goat's milk with that of Dan Robertshaw's goat's milk as well as skimmed milk from Diane St. Clair's Animal Farm in Shoreham.

This cheese is only produced in the early spring using a recipe loosely based on the Twig Farm Washed Rind Wheel. It has a rustic looking natural rind that lends some earthiness to the subtle, farmy sweetness, of cow's milk and the tangy bite of the goat's milk. The texture is remarkable - creamy and buttery, but still firm. This is the kind of cheese that is worth eating slowly to savor each bite. Pairs nicely with a drizzle of earthy, herbal honey.  


This is a seasonal cheese made in limited quantity. This cheese is generally available June - February.
