The story of this cheese began in 1979 with a farmhouse in Westmalle in Northern Belgium where Paul D'Haene and his wife Veerle Minsaer growing organic vegetables. Their passion for goats started with their first who they named Marie. Paul says, 'the goat is the cow of the poor farmer' and this is especially true in Belgium where goat cheese is an uncommon find amidst a plethora of washed-rind cow's milk cheeses. Paul and Veerle work now with more than 200 goats and they produce a variety of dairy products.
They now produce their cheeses in their dairy in Lichtaart just north of Antwerp. Their goats eat hay during the cold months and they graze on pasture throughout the warmer months. Their Mekkerbek is a sort of Valençay Belgique albeit a larger format pyramid. This fresh goat cheese has a thin skin of ashed rind and a moist, creamy texture, a beautifully bright flavor with herbal and floral notes and a lingering finish.
