Produced by Daniel Cloots at the Cooperative Gros Chęne in Mean Belgium where they work with five local farms providing them with cow, sheep and goat milk for their more than thirty varieties of cheese. Some of these cheeses adopt recognizable names from their more famous French brethren such as this Sainte-Maure Belgique. This log of fresh goat cheese has barely a skin of rind that is developed in our caves with careful wrapping and turning. The cheese has a moist, creamy texture, and a beautifully bright flavor with herbal and floral notes and a lingering finish.
We also offer this cheese with an ashed rind.
