This is a washed-rind cow’s milk cheese made by Anton Holzinger using organic cow’s milk with a touch of organic cream. Reminiscent of a Pont l’Evêque this cheese has a flat shape, an aromatic rind and a creamy texture. It has a medium-strong flavor with notes of hazelnuts and mushrooms. The reddish rind is the result of washing with a brine solution as the cheese ages – hence the word for red (“rot”) in the name.
