A classic Swiss cheese originally made in the monastery of Bellalay as early as 1570. Since that time, the cheese has obtained its A.O.C. designation and can be made in the mountainous areas and summer pastures of the districts of Franches Montagnes, Porrentruy, Moutier and Courtelary, the municipality of Saulcy, and the land owned by the cheese dairy at Courgenay. The cheese has a beautiful pink rind as a result of regular washing with brine as it matures. It can be quite aromatic and full flavored when at its peak.
