A full-flavored sheep's milk cheese in a format similar to Manchego resulting from the patterned molds used to form the cheese when young. It has a smooth texture similar to a young Manchego, but it has a more pronounced fruity flavor with a finish reminiscent of olives and hay. The milk used is a mixture of Merino ewe’s milk from Valdefuentes and la Serena. Add some olives, salumi, and maybe a little sangria... all of a sudden Spain seems just around the corner.
