First made in 1830, Caerphilly is one of the cheeese greats of the British Isles. Today, the Trethowan family at Gorwydd Farm, Ceredigion, are busy reviving this traditional farmhouse cheese.  Made using raw cow's milk and traditional animal rennet, Gorwydd Caerphilly is matured until it develops a light, leathery rind.

The center is crumbly and milky with a pleasant, sour tang. The edges have a smoother texture, with earthier flavors of mushroom and truffle. Overall, a mild but complex cheese that pairs nciely with a good wheat beer.
