From the tiny region of Aosta in Northern Italy. On the border with France and Switzerland, this is a mountainous region that has historically offered one of the only passages into Italy amidst the Alps. This fontina is made with raw cow's milk and it has a washed rind that is similar to the alpine cheeses from the nearby regions of France and Switzerland. It can be mild and sweet when young, or more aromatic and almost funky when more aged. This is a cheese that melts very well, so it works equally well on a pizza, in a pannini, or in a fondue.
