This stunning goat cheese is produced in the Loire Valley by Monsieur Chaize using the milk of his own goats. The unique shape of the cheese allows for a longer aging period than many smaller goat cheeses. We receive this cheese when it is just past 60 days aging.
The interior has a densely chalky, yet moist texture and the flavor has both the lemony tang of a typical chevre, and more rustic earthiness as a result of its age.
Sample the cheese from different sections of the cone and you will be captivated by the variations from top to bottom, interior to exterior.
