This pure goat's milk robiola is a fresh-aged goat milk formed into a small flat disc that is typical of the Piemontese robiole. The rind develops over the course of aging for about 4-6 weeks and to a thin, ivory-colored, wrinkly rind. As it ages, the outer edge of the cheese breaks down and develops a yeasty and earthy aroma.
